The provided diagram illustrates how a Smokery installed in a kitchen to prepare smoked food, works.
Overall, it is a very straightforward process under which food is prepared in an oven with the help of hot air.
Moving to details, as can be seen from the picture, the only visible part of the smokery is the oven in which the food is placed. For instance, few fishes can be seen hanging on hooks While the actual mechanism operates under the ground.
The smokery has two underground chambers; both have removable lids. The first chamber lets the air enters, and its pressure can be controlled by using the lid as a resistor. After entering, the air flows into the second chamber, where the burning logs heat up the air. In fact, this chamber also has a lid to insert logs to keep the fire burning. Finally, the hot air enters the smokery via a metal pipe and raises the temperature inside the oven, and with heat, the smoked food gets prepared in the smokery.
